My most favorite party appetizer snack recipe of all time!!
Ingredients:
4 Hard boiled eggs (you can do as many as you want and adjust other ingredients accordingly)
1 tbl spoon Mayo (can substitute Greek yogurt for healthier but don't cause it doesn't taste as good)
2 tea spoon Sweet Relish
2 tea spoon Dijon (or other strong) Mustard
Paprika sprinkled on top
1. Hard boil your egss. I usually put the eggs in a pot of water, covered, on the stove on high heat. After the water gets to boiling I take the cover off and let it sit for 7 min. Usually I do this a few hours before I need the eggs, putting the hard boiled eggs in the fridge so they are nice and cool when I go to make the deviled eggs.
2. Peel the hard boiled eggs, cut them in half long-ways, and put the yellow yolks in a bowl, leaving the white exterior face up on a plate. [Note, the older the eggs the easier they are to peel, so I usually buy eggs a day or two before I will be making the devils]
3. Mix mayo, relish, mustard, in with the yolks and stir out all the lumps. (My Grammie likes to put the hard boiled egg yolks through a strainer so its really easy to mix)
4. Take a spoonful of the mixture and put it back into the white eggs.
5. Sprinkle paprika on top!
